Fundamentals of Nutrition
Course Overview
Our aim is to help you understand a little more about your own food choices and behaviours so that if you want to start making changes, you can identify the first steps.
This course will introduce you to some of the key ways in which nutritional science has morphed into potentially misleading front of pack labels and health claims that support the consumption of ultra-processed foods and unhealthy diets.
You will see where many of the misleading concepts that shape our dietary beliefs and eating patterns today originated from, and explore how the narrative of counting calories, balancing macronutrients and reliance on ultra-processed foods, has distracted us from the eating patterns we evolved with.

If you’re interested in understanding more about the role of nutrition in improving health and performance, this course is for you. We can deliver it as a standalone activity or as part of a broader, integrated wellbeing program.

Dr Kieron Rooney
Kieron is a nationally recognised expert in nutrition research and translation into policy and practice. To date, his novel research has focussed on how high sugar and/or high fat diets impact metabolic health.
Kieron helped develop this program by applying his extensive knowledge in nutrition to give you the practical tools you need to understand food, it's place in society and how to eat right for better health.
Simone Chartres
Simone is part of our expert team to support you as you seek to improve your health and wellbeing. She is an endorsed Clinical Psychologist with the Australian Health Practitioner Regulation Agency (AHPRA).
Simone has extensive clinical experience in the assessment, diagnosis, and treatment of anxiety disorders, mood disorders, substance use disorders, and eating disorders, and focuses on the benefits of nutrition as part of her treatment approach.

This course is broken down into five chapters you can complete in your own time. Each chapter has a corresponding activity to complete to help you put your knowledge into practice.
Introduction & Course Overview
You will meet Dr Kieron Rooney, Associate Professor at The University of Sydney. As a registered Nutritionist and academic he uses what we know from nutrition science to unpack the influence of marketing on food choices and diet quality.
Evolution of Food, Energy & Macronutrients
In this chapter, we will take a look at the evolution of food and dietary patterns through time, how we first discovered the kilojoule, the development of what we call the “energy balance theory”, and how this led to our obsession with counting calories.
Industry Influence on Our Food Environment
Are the number of “stars” on the packets of food we eat really a good indication of optimal nutrition? In this chapter, we cover how the food industry has used a reductionist way of thinking about food (by focusing on energy and single nutrients like carbohydrates, fats, and proteins) to their advantage in marketing and selling their ultra-processed food products.
Diets of the World
We will take a deep dive into some of the most popular and best known diets of the world, including the Mediterranean, Ketogenic and Paleo diet and look at what makes them unique. We will compare them to the standard Australian diet, and help you decide which dietary approach may be best for you.
NOVA Food Classifications
We will finish our Fundamentals of Nutrition program by looking at a new way to think about your diet, the NOVA classification. It is one of the simplest ways to think about eating, that now has extensive research to demonstrate its beneficial health effects. We think you are going to love it!
